Green Pea Guacamole

Serves 4

2 cups thawed frozen green peas

1 small jalapeno pepper, seeded and minced

1/4 cup cilantro, packed

1 large lime, juiced

1/2 teaspoon coarse sea salt

2 large avocados

1. In a food processor, puree peas, jalapeno, cilantro, lime juice and salt until mostly smooth; mixture should still have some texture.

2. Halve avocados, remove pits and scoop out flesh; cut into cubes and add to food processor. Puree until well combined but still chunky. Transfer to a serving bowl and serve immediately.
